  1. Who is Viking Range Corp.?
    Viking Range Corporation is the originator of commercial-style appliances for the home. Unlike other appliance manufacturers, Viking offers a complete kitchen of coordinating professional appliances. Manufactured in state-of-the-art manufacturing facilities in Greenwood, Mississippi, Viking products are some of the highest quality appliances in the United States.

  2. What Viking Appliances are available?
    Viking complete kitchens – indoor and outdoor – offer the following in many sizes, styles, and finishes: Built-in and freestanding ranges, built-in cooktops and rangetops, built-in wok cookers, grills and griddles, built-in ovens, warming drawers, microwave & convection microwave ovens, multi-use wall chambers, ventilation systems, dishwashers, trash compactors, food-waste disposers, built-in refrigerator/freezers, cabinet-depth freestanding refrigerator/freezers with "built-in look" kits, built-in wine cellars, undercounter refrigeration, ice machines, outdoor gas barbecue grills and a vast selection of other outdoor products.   3. Does Viking offer a microwave oven?
    Yes. Viking offers a microwave oven, convection microwave oven, convection microwave high speed oven and a convection microwave oven hood to complement the Viking kitchen.  Matching trim kits are also available, in 3 size options, for built-in installations.

  4. How do Viking appliances compare to other professional styled kitchen appliances?
    Viking is the Designer Line of appliances with a full complement of options. Unlike other manufacturers, who put professional faces on their household cooking products, Viking products were designed for true professional performance. Combining that performance with their full array of style and color options makes Viking the most complete line of Professional kitchen appliances available.

  5. What does Viking offer that other brands don’t?
    The full Viking kitchen! Your kitchen can now have a complete professional appearance – all of your cooking, cleaning and refrigeration appliances. Viking is also the only brand that offers coordinated finishes, colors & trim throughout the entire line. Most Viking Professional Series appliances are available in Stainless Steel, Black, White, Viking Blue, Forest Green, Burgundy, Almond, Graphite Gray, Biscuit, Stone Gray, Lemonade, Mint Julep, Cobalt Blue and Eggplant – with brass trim as an option.   And, most Viking Designer Series appliances are available in Stainless Steel, Black, White, Biscuit, Graphite Gray and Stone Gray – with brass trim as an option.

    Viking appliances are sold through a network of appliance retailers and builder suppliers.     VIKING COOKING FEATURES

  8. What are the high & low BTU ratings on the stainless steel burners?
    The Viking stainless steel burners perform at 15,000 BTU high and 1,000 BTU low settings. At these settings, you can boil large quantities, create truly seared wok meals, and simmer delicate sauces.

  9. Other brands have simmer ratings as low as 450 BTU’s. How can the Viking provide a better simmer with a 1,000 BTU rating?
    It is true that some manufacturers claim ratings as low as 450 BTU’s. But what they don’t say is that the 450 is an AVERAGE BTU rating – their burner may be on for 7 seconds and off as long as 50 seconds. When it’s hot, it’s really hot; when it’s not, it’s not! This is not what any cookbook would describe as a simmer. The Viking Vari-Simmerä setting is gentle enough that you can actually place a paper towel on the burner without igniting the towel.

  10. Can I interchange the griddle and barbecue grill on my range or rangetop?
    Our American Gas Association approvals for residential use prevent the ranges from having interchangeable griddles and grills. All Viking appliances are manufactured within these guidelines, to maintain perfect safety in your home. By having a fixed griddle, we are able to provide one that is thermostatically controlled for exact temperatures – just what Chef Pierre prescribes for his delicate crepes and maintaining precise temperatures for his sauces – not simply high, medium and low settings. Viking also offers a portable griddle that fits over the surface burners.

  11. Why do the Viking ranges and rangetops require backguards?
    The professional performance of the Viking ranges and rangetops necessitate an AGA approved heat shield behind the ovens and burners. Rather than manufacture one style backguard into each unit, Viking engineered four different styles to enhance your custom kitchen design. When you order a Viking range or rangetop, you can choose either the island trim, 6" high backguard, 10" high backguard or 24" high backguard with shelf.

  12. What is an Infrared Broiler? Why is it better?
    If you’ve ever wondered why it is that restaurant broiled foods taste better than foods broiled at home – It’s the Infrared broiler. Viking’s GourmetGlo Infrared broiler cooks your food with direct heat. Infrared heat is absorbed directly into the food’s surface, rather than just heating the air around it, searing the food to ensure that juices are locked in. With Infrared heat, your foods don’t dry out -- where regular broiling by exposure to hot air only is likened to a dryer taking the moisture out of your clothes.

    VIKING CONVECTION COOKING

  14. What is convection cooking and how does it work?
    Convection heat is produced by hot air circulating in the oven – creating more even heat distribution. In Viking’s Convection Cook mode, heat is fan-circulated from a dedicated convection element in the rear of the oven cavity. With no direct heat from the bottom or top elements, the consistent top-to-bottom temperature is excellent for delicate dishes like pastries and soufflés and for multi-rack baking – no more turning racks during baking. In Viking’s Convection Bake mode, a fan circulates the air heated by the conventional bake and broil heating elements. By roasting with convection heat, the outside is seared, sealing the juices inside for moist, flavorful meats. With convection heat, most recipes can be adjusted by reducing the heat 25 degrees and the cooking time by 10 percent.

  15. How does convection in gas ovens compare to convection in electric ovens?
    The natural airflow created by gas itself tends to create more even heat throughout the gas oven, without the addition of the convection fan. In the gas oven, a convection fan aids in roasting and broiling large items – about a 10% to 15% benefit in performance. In the electric oven, the radiant electric heat is greatly enhanced with air circulation. The benefit of convection in electric ovens is approximately 40%.

  16. Can I still use my old recipes in the Viking convection ovens?
    Yes. In Viking’s conventional bake and broil modes, heat is generated from the upper and lower heat elements only – like your old oven. Some recipes can also be enhanced with convection cooking or baking.

    VIKING VENTILATION

  18. What type of ventilation is required with the Viking range and rangetop?
    Viking cooking equipment features very powerful burners and proper ventilation is necessary to capture the heat potential of these appliances. Viking offers a large selection of sizes and styles specifically designed to work with each Viking cooking appliance.

  19. Why should I buy the Viking Hood?
    Viking’s ‘all new’ hood has commercial-type features that preserve the unique professional style of your Viking kitchen. They are designed and manufactured to provide maximum ventilation for Viking cooking appliances. Some of their superior features are: a unique hidden control panel; commercial type baffle system that is dishwasher safe for ease of cleaning, variable dimmer controlled halogen lights, variable speed blowers, double walled construction, stainless steel interior, standard heat lamp socket, virtual seamless design with no visible screws, and a heat sensor that turns the unit on full power when cooking temperatures reach uncomfortable levels. The hood can be used with either of the optional interior or exterior power sources. The exterior power ventilation blowers mount to your roof or outside wall

  20. Can I use downdraft ventilation with the Viking range?
    Downdraft ventilation is not available for the range – there is no room behind the range for this system. We view the downdraft ventilation as a "problem solver", especially in island installations of rangetops and cooktops where an overhead canopy hood is not an option. However, the downdraft will not work with the use of the powerful barbecue grill burners, an option on most Viking rangetops. The Viking downdraft is available with interior or exterior blowers.

  21. What size are the ducts on the ventilation products?
    The hoods use a 7" duct with the 600 CFM blower, a 10" duct with the 900 and 1200 CFM blowers, and an 8" duct with the downdraft blowers. Please refer to your installation instructions for exact placement.

  23. Why should I buy a Viking dishwasher?
    #1 Reason: They preserve the unique professional styling in your kitchen and match other Viking appliances perfectly. These dishwashers are state of the art with all stainless steel and galvanized construction, stainless steel wash arms and filters, dual motors, and forced-air drying. The step-up model also features a lighted interior, cutlery tray with its own wash arm and 170o rinse water option. Separate door panels are available in all 14 Viking Pro' Series colors and 8 Viking Designer Series colors, with brass trim option. This dishwasher is as quiet as any on the market.

    VIKING REFRIGERATION

  25. Why should I buy the Viking refrigerator?
    #1 Reason: It preserves the unique professional styling in your kitchen and matches other Viking appliances perfectly. This refrigerator is state of the art with an Electronic Temperature Control System that constantly monitors and immediately reacts to maintain selected temperatures. The Viking refrigerator has a Meat Savor Drawer with separate temperature controls that allow long-term fresh meat or produce storage at 28-32 degrees without freezing.

  26. Does the Viking refrigerator have 2 compressors?
    No, we do not use 2 compressors. That is quite an old and dated refrigeration system. To our knowledge there is only one manufacturer still using this outdated technology – which has the negatives of noisier operation, one or the other compressor usually running and an antiquated cycle defrost system for the fresh foods compartment. The Viking refrigerator is manufactured with the latest refrigeration technology available.

    INSTALLATION & SERVICE

  28. What are the gas requirements?
    Standard ½" ID household gas lines are sufficient for all Viking gas appliances. Check your installation instructions for exact placement and local codes for safety requirements such as shut-off valves. Specifications are packed in each Viking appliance, and are available on the Viking web site.

  29. Can Viking gas appliances be converted to LP?
    Viking gas ranges & rangetops can be factory ordered already set for LP, or can be field converted by an authorized service technician with an optional conversion kit. The Viking cooktops must be factory ordered as LP.

  30. What do I need to know about installing a Viking?
    All Viking appliances have been designed and engineered for home residential use, and have been approved for this use by the governing agencies (UL, AGA, etc.) There are no special fire walls or sub-floors required, as with some commercial appliances. Appliance dimensions are available from the Viking web site. Step-by-step installation instructions are packaged with every Viking appliance. The instructions are also available by calling SYB at 626-338-3800 and   via fax from Dimensions Express (dial 1-775-833-3600, enter 8051 for Viking’s code).

  31. Where can I get installation and service?
    Factory trained installers and service technicians are available throughout Southern California. You can get their names from your retail dealer or call us at Sues, Young & Brown, Inc. We offer full service support to help you enjoy owning and operating your Viking. Our service department can be reached Monday through Friday, from 8AM to 4:30PM, at (626) 338-3800.
